Well Wing Chun (and all derivative styles; Ving Tsun, Etc.) doesn't really have a name for a two man fighting - grappling drill... what they have is the Chi Sao drills, for striking, trapping and warding off, but that does not mean you can not apply it to Wing Chun... even Siu Nim Tao! This is the essence of the Crane from which the original style emerged.

Now typically each action in Siu Nim Tao is considered either a mechanical movement for muscle memory, energy exercise or outward energy expressions of striking or deflection.  Rarely are any of the actions used in a body on body grappling action... but with each outward expression, there is an equal retractive aspect as well.  The Bon Sao (Wing or Bridge Hand) as example is used primarily with the outer aspects of the arm for deflection, blocking or in rare cases even a strike.  Rarely is it used as a grappling type action or as a trapping grabbing action, but it can be used in many ways and anatomical structures on an opponent.
